An elegant, simple, side dish that’s ready in under 10 minutes! This is my super easy French almond green beans recipe (haricots verts amandine). Sometimes called green beans almondine, this easy side of greens features perfectly crisp green beans, tossed with slivered almonds sauteed in browned butter. A simple recipe you can rely on when serving up your next side of greens!

Ingredients in these French Almond Green Beans

There are so many variations on French green beans, or green beans almondine. I like to keep things very simple by using green beans, unsalted butter, slivered almonds, and salt and pepper! Of course, you can jazz it up by using lemon zest, garlic, shallots, or even some lemon juice. But I like to keep things minimal in this recipe so that is can pair nicely with a wide range of dishes, like my classic French duck a l’orange!
How to Make
Trim the ends off the green beans, then steam them for 3-4 minutes. They will become a lovely vivid bright green, and retain their crunch. Do not overcook them or they will become mushy!

Then simply drain them and place them in a bowl of ice water immediately. This stops them from cooking any further, and helps retain that lovely bright green colour.

Meanwhile, brown some butter in a pan, then toss in your slivered almonds until toasty and golden.

Then pour them over your drained green beans, season with salt and pepper, toss and serve! Easy and delicious!

The beauty of these French almond green beans is that they pair well with just about any main meal! Because the flavours are relatively neutral, they would work wonderfully alongside any grilled or roast meat, pasta, or as the ultimate easy side of greens for the Christmas table! Place your green beans in a steamer basket for 3-4 minutes until bright green, yet crisp. You can also blanch them for 1-2 minutes in boiling water instead. Drain, and place into a bowl of ice water.

Meanwhile, place your butter in a small pan on medium heat unti lit begins to brown. Throw in your slivered almonds, and stir for 2-3 minutes, or until they are toasted and golden.

Drain the green beans into a bowl, pour on the hot almonds (and all the butter in the pan!) Toss, season with salt and pepper to taste, and enjoy!
